Beef Enchilada Bake

Preheat oven to 375 degrees. Spray a 9x13 pan.

In a large skillet over medium high heat, brown ground beef, onion, garlic, and peppers. Stir in green chilies, beans, spices, and season with salt and pepper to taste.

Spoon enough enchilada sauce into 9x13 to barely cover bottom. Put one layer of tortillas on top of sauce and then spread a few scoops of beef mixture on top. Sprinkle with cheese. Repeat layers, topping with all remaining enchilada sauce, then all remaining cheese.

Bake for 30-35 minutes or until bubbly throughout and cheese begins to brown.

Garnish with chopped cilantro, sour cream, and/or sliced avocado if desired.
