  1. Heat olive oil in Dutch oven over medium heat. Stir in sausage and saute for 2 minutes.

  2. Add onion, bell pepper, and season with salt and Cajun seasoning. Cook until vegetables begin to soften - about 5 minutes.

  3. Stir in the rice until evenly coated in vegetable mixture, then pour in tomatoes with juice, garlic, broth, and thyme.

  4. Bring to a simmer over medium high heat, then reduce to low. Cover and simmer 20 minutes.

  5. Stir in shrimp and cook uncovered until the shrimp turn pink.

  6. Remove from heat and let stand 5 minutes before serving.
