White Bean Soup with Sausage

Night before

Place the beans in a large bowl and cover with enough water that they can double their volume and still be covered. Soak overnight.
Cooking Day

Drain and rinse beans. Set aside.

In large stockpot, heat oil over medium-high heat. Add vegetables to pot and sauté for about 5 minutes.

Add seasonings, beans, and liquids, cover, and simmer for about 2 1/2 hours. Add sliced sausage and kale and continue to simmer, uncovered, for about 30 minutes more or until beans are tender.
