Virginia’s Egg Rolls

  1. In a large stockpot, brown bacon and remove. In remaining bacon grease, brown beef, onions, and garlic. Add green beans and cook until crisp tender. Add cabbage, sprouts, and seasonings. Cook until cabbage is tender.

  2. Place spoonfuls of filling into egg roll wrappers. Wet finger with water to run along inside edge of wrapper to seal. Wrap all egg rolls before beginning to fry.

  3. Heat oil in medium saucepans and fry egg rolls for 2-3 minutes on each side, or until golden on all sides. Works best with only 2-3 in pan at a time to avoid overcrowding. Remove to plate lined with paper towels to drain.

    Can also be sprayed on both sides with nonstick spray and then baked or cooked in an air fryer. Will not be as crispy, but will be quite a bit healthier!
  4. If desired, serve with drizzle of apple cider vinegar prepared with a smashed and minced garlic clove, and salt and pepper.
