Ingredients
Instructions
-
Preheat oven to 400 degrees.
-
In small bowl, whisk eggs and cream together and set aside.
-
In large cast iron skillet, cook bacon until crisp. Remove bacon from pan to drain on paper towel-lined plate and leave about 3 tablespoons of fat in skillet.
-
Cook diced potatoes in same skillet until tender. Add thyme, salt, and pepper to taste. Add onions and garlic, cooking for 1-2 minutes. Add spinach to wilt. Distribute evenly over bottom of pan and remove from heat.
Swap out vegetables as desired. Great with mushrooms, peppers, cooked asparagus, broccoli ... whatever you have on hand. -
Crumble bacon over vegetable mixture. Top with shredded cheese and pour egg mixture over top.
Number of eggs and amount of cream can be adjusted for size of skillet/amount of vegetables. Just keep ratio the same and adjust baking time as needed. -
Place skillet in the oven and bake for 12-15 minutes or until starting to lightly brown on top. Insert knife to check for any remaining liquid.
-
Serve with sliced tomatoes, additional green onions, avocado or any other desired fresh vegetables.
