Sheet Pan Sausage and Veggies

  1. Preheat oven to 400 degrees. Line a very large sheet pan or two smaller pans with foil or parchment paper.

  2. Chop vegetables to be approximately the same size to ensure cooking at the same pace. Smaller cuts will cook faster. Cut the sausage into 1/2 inch slices.

  3. Spread the veggies and sausage in single layer on the pan(s) making sure that everything has space to cook evenly.

  4. Drizzle olive oil over top followed by seasonings. Toss with hands to coat evenly.

  5. Bake for 15 minutes, flip/stir and return to oven to bake another 10-15 minutes or until vegetables are crisp-tender.

  6. Serve over rice or quinoa with grated Parmesan cheese or fresh herbs to garnish.

Note

Any vegetables will work in this recipe as long as similarly sized. Lots of options for seasonings too!
