Creamy Bowtie Pasta with Italian Sausage, Sun-dried Tomatoes, and Spinach

  1. Cook pasta to al dente according to package directions, using plenty of salt. Reserve 2-3 cups of pasta water before draining.

  2. In a large skillet, brown sausage. Stir in sun-dried tomatoes and garlic, cooking until fragrant - about 1 minute. Stir in the flour and let it cook down for 3-4 minutes

  3. Add cream and broth and stir until thickened. Add the cheeses and stir until melted. The sauce will be quite thick at this point. Stir in enough of the reserved pasta water to make smooth consistency.

  4. Stir in the spinach and the cooked, drained pasta. Remove from heat and serve with additional grated Parmesan, if desired.
