Lemon Rosemary Lentil Soup

In large stockpot, heat oil on medium high heat, and sauté onion. Add garlic, carrots and yellow pepper and continue cooking for about 5 minutes.

Add lentils, broth, water, cayenne, and salt. Cover and cook on low 30 minutes to an hour or until carrots and lentils are tender.
Different lentils can vary in cooking time needed. -
Stir in lemon juice, zest, and rosemary. Garnish with additional rosemary if desired.
