(rinsed and drained)

avocados
(chopped; to garnish - optional)

(chopped; to garnish - optional)
sour cream
(to garnish - optional)
Instructions

Add olive oil to stockpot over medium-high heat. Sauté onion for 3-4 minutes and add garlic and sweet potato. Cook another 2-3 minutes.

Add all remaining ingredients, stir to combine, and simmer, uncovered, for 20-25 minutes.

Using the back of a spoon, mash some of the beans and sweet potato against the side of the pot to thicken texture, if desired.

Serve with avocado chunks, cilantro, green onions, and/or sour cream if desired.
