In a large skillet, brown sausage in olive oil over medium heat. Add red pepper, onion, and garlic. Cook 3-5 minutes and add thoroughly drained spinach. Remove mixture from heat and season with salt and pepper to taste. Stir in ricotta and Parmesan.
4 Fill bread shells with mixture and top with sliced pepperoni followed by mounded mozzarella.
5 Bake 10-12 minutes or until cheese is melted and bread is super crisp. Top with oregano and hot pepper flakes.
