    Pumpkin Batter
  • 2 1/2 cup flour
  • 2 cup sugar
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 15 ounce can pumpkin
  • 1/3 cup olive oil
  • 2 tsp vanilla
    • Cream Cheese Filling
  • 12 oz cream cheese (softened)
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup brown sugar
    • Topping
  • 1/4 cup flour
  • 1/3 cup brown sugar
  • 3/4 tsp cinnamon
  • 3 tbsp butter (softened)
  • 3 tbsp pecans (finely chopped)
Instructions

    Preheat oven to 375 degrees. Spray muffin cups or line with paper liners.
    2. Pumpkin Batter

    Beat pumpkin batter ingredients together until incorporated. Fill muffin cups 1/2 full with batter.
    3. Cream Cheese Filling

    In separate bowl, beat together cream cheese filling ingredients until light and fluffy. Place spoonful of cream cheese mixture into center of each muffin cup on top of pumpkin batter.

    In small bowl, mix topping ingredients together until crumbly. Sprinkle on top of cream cheese layer in muffin cups.

    Bake muffins for 20-25 minutes.
