In large stockpot, sauté onions in oil over medium heat. After about 5 minutes, add in garlic, Italian seasoning, salt, pepper, and cayenne, stirring occasionally for 1-2 minutes.
2 Add broth, vegetables, beans, and tomatoes. Simmer, uncovered, for about 10 minutes. Add pasta and continue simmering until pasta is al dente.
3 Stir in red wine vinegar and add additional salt and pepper to taste.
4 Serve with fresh basil or parsley, a drizzle of olive oil, and/or Parmesan cheese if desired.
