Coat 9x13 pan with cooking spray. Arrange 1/2 of cubed bread in bottom of dish. Sprinkle cream cheese cubes evenly over bread and then apples. Top with remaining bread.

In a large bowl, beat remaining ingredients. Pour over bread. Cover with plastic wrap and press down to soak bread. Refrigerate overnight.

Remove pan from refrigerator to come to room temp. Preheat oven to 325 degrees.

Bake uncovered for 55 minutes or until knife entered into center comes out clean. Let stand for 10 minutes before serving.
