In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Beat in egg and oil, then stir in vanilla, pineapple, and chopped pecans.
3 Spoon batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pans for 10 minutes and then turn onto cooling racks. Cool completely before frosting.
Frosting
4 In a medium bowl, combine powdered sugar, cream cheese, butter and vanilla. Beat until smooth, then stir in chopped pecans. Spread on cooled cake between layers and on top.
