Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle. Sprinkle blueberries on each pancake. Cook on both sides until golden brown.

3 In a medium saucepan, mix sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3-4 minutes. Mix in remaining blueberries, reduce heat, and simmer 10 minutes, or until the blueberries burst. Stir in butter and serve over pancakes.
