Tiny Chocolate Cheesecakes

  1. Preheat oven to 350 degrees. Grease muffin pans or line with foil liners. Will make 48 mini or 24 regular muffin cups.

  2. Combine melted butter and crushed Oreos. Sprinkle each muffin cup with 1 tsp crumbs (minis) or 2 tsp (full size).

  3. Beat cream cheese until light and fluffy. Gradually beat in sugar, then eggs one at a time, beating after each addition.

  4. Melt chocolate in microwave in 20-30 second increments, stirring in between. Stir chocolate into cream cheese.

  5. Spoon cream cheese mixture into each cup (1 T for minis, 2 T for full size

  6. Bake minis for about 20 minutes or full-sized for about 30 minutes or until toothpick or knife inserted into centers comes out mostly clean.

  7. Cool and then chill completely in refrigerator.

  8. Garnish with whipped cream and chocolate shavings or mini chocolate chips.
