Carrot Cake with Cream Cheese Frosting

Preheat oven to 350. Grease and flour three 8-inch round cake pans.

In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Beat in egg and oil, then stir in vanilla, pineapple, and chopped pecans.

Spoon batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pans for 10 minutes and then turn onto cooling racks. Cool completely before frosting.
Frosting

In a medium bowl, combine powdered sugar, cream cheese, butter and vanilla. Beat until smooth, then stir in chopped pecans. Spread on cooled cake between layers and on top.
