In large stockpot, sauté onions in oil over medium heat. After about 5 minutes, add in garlic, Italian seasoning, salt, pepper, and cayenne, stirring occasionally for 1-2 minutes.

Add broth, vegetables, beans, and tomatoes. Simmer, uncovered, for about 10 minutes. Add pasta and continue simmering until pasta is al dente.

Stir in red wine vinegar and add additional salt and pepper to taste.

Serve with fresh basil or parsley, a drizzle of olive oil, and/or Parmesan cheese if desired.
